The baguette, heritage of humanity

After five years of heated debate on the issue, UNESCO will register the baguette as an intangible heritage of humanity, in order to protect it from the effects of industrialization which threatens to make it lose its artisanal character and which has led to the closure more than 400 bakeries in France.

« It is a work of five years which has just been crowned today“, affirmed, victorious, the president of the National Confederation of the French bakery-pastry, Dominique Anract, at the origin of the candidature of the baguette.

He is of the opinion that a good baguette is the result of a long and meticulous work giving the bread a texture « crispy on the outside and soft on the inside ».

Because of the know-how of French bakers, UNESCO will also protect their expertise and the culture of the baguette itself, which is deeply rooted in the way of life of French people all over the world, including in Montreal.
